Easy Baked Salmon with Orange Ginger Glaze

Ingredients

2 individual portions of salmon

2 tbsp olive oil
-
Salt and pepper to taste

For Orange Ginger Glaze:

1 tsp orange zest
-
½ cup fresh squeezed orange juice
-
1 tbsp coconut aminos
-
2 tbsp water
-
1 inch ginger root (or frozen cube from Trader Joes)

1 tsp honey (optional)

Directions

- Preheat oven to 350
-
Season salmon with salt and pepper to taste and 1 tbsp olive oil per salmon filet

Place salmon on parchment paper lined baking sheet and bake for 8-10 minutes

For Glaze
-
Place all ingredients in blender and blend until smooth

Top baked salmon with glaze
-
Serve over greens of choice or with a side of roasted veggies and enjoy!
